Kabocya Pumpkin Muffin

Here in South Melbourne Market, there is a store selling really good pumpkin, tastes sweet and crunchy~ Maybe it is good for making sweets as well?  ^^


RT Soften Butter 100g
Sugar 80g
Egg 2pcs (I used 55grms egg)
Plain Flour 150g
Baking Powder 1tspn
Cut and Skin Removed Pumpkin 150g

1. Put the pumpkin into microwave, at 800W approximately 4mins, smash it with a fork when it is soft, then put into the fridge wait to be used.

2. Preheat the oven to 180C.

3. Whisk the butter and sugar till creamy and fluffy, add in egg slowly little by little till it is well incorporated. If splitting happened, put a bowl of hot water below the mixing bowl and mix till the two ingredients well blended.

4. Use a spatula, or mixer paddle add in the flour and baking powder at once.

5. Add in the pumpkin mash by using spatula, and divide the dough among eight muffin cups.

6. Bake at 180C for ~40mins.
