Sweet Short Pastry - Pate Frolle

A crisp sweet pastry with almond scented. This is the best short pastry I love so far. I have used it to make Almond Sponge Strawberry Tart.

Unsalted Butter @ RT 225g
Icing Sugar 150g
Whole Egg 1pc
Egg Yolk 1pc
Plain Flour 400g
Ground Almonds 75g

1. Cream the Butter and Icing Sugar, not to over beat.
2. Mix in Egg and Yolks till combine.
3. Then add in the Plain Flour and Ground Almond to form a smooth paste.
4. Roll the pastry out to approximately 3cm, wrap and fridge it for at least one hour before using it.
5. Roll out to desired shape, rest the dough again for at least 30mins before using it.
6. Bake at 190C till desired colour shade is achieved.
