Tools that you will need:
Ingredients:
High gluten flour 275g
Instant Dry Yeast 5g
Sugar 15g
Honey 25g
Salt 5g
Egg 25g
Finely Grated Carrot 85g
RT Soften Butter 15g
Carrot Juice 70g~85g (water absorption depends on flour used)
1. Put all ingredients, except Butter into mixing bowl.
2. Start mixing by hand or by dough hook until the dough is shiny.
3. Add in the butter, and continue to knead until the dough is shinny and elastic.
4. Put the dough back into mixing bowl, wrap the bowl with cling film, let the 1st fermentation starts, takes about 60mins at warm place or until the dough is about 2~2.2x the original size. If the room temp is low, put a bowl of warm water under the mixing bowl, this helps with the fermentation process.
5. Punch out the air in the dough, knead slightly, and let the 2nd fermentation starts, takes about 30mins to reach 2~2.2x the original size.
6. While waiting, oil the loaf tin.
7. When the 2nd fermentation is completed, divide the dough into 4portions and arrange them in the loaf tin prepared earlier.
8. Final fermentation before baking, takes about 50mins at warm place, rem to cover the top with damp cloth to prevent drying out.
9. Bake at 190C for 25mins to 35mins. Then your beautiful yet delicious and healthy bread is ready~
