Friands Friendly Tips

Friands could be the simplest petit four to make, and could the trickiest to make. It only needs 5 ingredients,  a mixing bowl and a fork. But... the mixing process cant involved any aeration, else the middle of the Friands will form up a small hill after baking.

A friend of mine gave me some suggestions, I thought it would be nice to share with you guys who like this little beautiful dessert as well.

Usually, friands calls for almond meal, but any other nut meal is perfectly fine except macadamia nuts is kinda oily, so, combine it is better to with other nut to balance the texture and consistency.


When mixing the ingredients, use a fork, dont use a mixer or even a hand whisk.


It is good to
1. Tap the mixture on the bench after pouring into mould
2. Run a skewer backward and forward in the mould to remove air bubble
3. Then let it rest for ~30mins (if time permits). This helps to prevent formation of tiny holes or large tunnels in the friands.

I always make this mistake - hill developed in the middle of friand with a collar all the way around. It could be oven temperature is too high, or the mixture was over aerated.

If you have any left over friands, it is perfectly to be frozen in the fridge up to three months long! Dont you think it`s incredible?
