I was reading Japanese cooking website today and came across different kind bread recipes that use "yu-dane". So, tried to translate it to English using Google Translate, and it turns out to be "You are Hot"! Ha, what a cute Translator.
This Black Sesame Bread was made by adjusting the recipe from this site in order to use "You`re Hot" in my bread. http://www.rakuten.ne.jp/gold/tubasa55/recipe/bread/1_5kin_goma.html
See the pictures and it really tells you that it is HOT, and able to make the bread so soft and fluffy~~~
Here`s the recipe for this bread (the portion is only for one person, please multiply it to your required serving size), enjoy~
You Are Hot (YAH) Portion
High Gluten Flour 7.5g
Water 37.5
Bread Portion
Bread Flour 87g
Yeast 1.9g
Salt 0.92g
Sugar 8g
Butter 9g
Milk 20g
Black Sesame Powder 8g
YAH 45g
1. Put YAH ingredients into microwave usable bowl, mix them well, then DING it for 2mins 800W.
2. Remove it from microwave, stir well, it should formed into "glue" looking paste, if not repeat step1 by using 10s time frame.
3. Cover the paste well with cling film, or put it in a airtight container. This is to avoid the paste drying up.
(what I read on the web, it says the best is to leave it over night, or 8~10hours in the fridge before using it.)
Next day...
5. Warm up the milk to about 37C, put in the Yeast and let it rest for 3mins.
6. At the mean time, put Bread flour, Salt, Sugar, YAH from (3) into mixer.
7. Put (5) into (6) and start mixing.
8. When dough start forming up, put in Butter (room temp soften).
9. Keep kneading the dough till thin elastic sheet could be form when the dough is pulled.
10. Add in the Black Sesame Powder and mix well.
11. Put (10) for 1st fermentation, takes about 60mins to wait for it to raise to double the size.
12. Punch out the air completed from (11), cut into desired size, and let it rest for 15mins, known as bench time.
13. Shape the dough into desired shape, and put them into bread mould or baking tray. As I am still the beginner in bakery, I just use whatever is available to me in the kitchen.
14. Put the dough for 2nd fermentation, wait until the dough rise to double the size and brush the dough with milk/ egg in order to get shinny finishing.
15. Put it into 180C preheat oven, bake for 18~20mins and it is ready for your stomach~~~
