Goma is Sesame in Japanese language. Basically Japanese uses Goma almost in everything, from cooking oil to entree, main course and even dessert like ice cream.
Bread Flour 468g
Yeast 9.5g
Sugar 40g
Salt 4.6g
Goma (Black Sesame) 38g (instead of black sesame seed, black sesame powder was used)
Butter 45g
Egg 1pc + Water 330g
1. All dried material in the mixer
2. Add in melted butter
3. Add in Egg Water mixture
4. Mix till elastic dough is formed
5. Fermentation for 60mins/ or (4) is doubled in size
6. Punch out the air
7. Cut in to desired shape
6. Bench sitting 15mins, cover with damp cloth
7. Shape into desired shape
8. 2nd fermentation 60mins/ or (7) is doubled in size
9. Preheat oven 180C, oven baking mode (no fan)
10. Bake for 18mins, and ready to serve~~~
The texture of the bread is bit chewy, if you prefer a softer texture, you may wanna try the "You're Hot Bread" where the basic recipe is the same, but Yu-dane (mixture of High Gluten Flour with Hot Water in Japanese) is added while making the bread.
