Friands Friendly Tips

Friands could be the simplest petit four to make, and could the trickiest to make. It only needs 5 ingredients,  a mixing bowl and a fork. But... the mixing process cant involved any aeration, else the middle of the Friands will form up a small hill after baking.

A friend of mine gave me some suggestions, I thought it would be nice to share with you guys who like this little beautiful dessert as well.

Sugarless English Scone with Dates

Made some scones for my Saturday breakfast today, turns out beautifully and delicious in less than an hour. While the scones were still baking beautifully in the oven, made some strawberry jam to go with the scones. Yummy yummy~

And, the extra raw scone dough, I have cut them to the shape i want, individually airtight wrapping them, then freeze them in the freezer for enjoyment on some other day.

Healthy β-carotene Carrot Bread

I have the habit of drinking carrot juice, however the remaining after squeezing out the juice seems to be too wasteful to be thrown away. And, found a way to make use of it, to turn it into a high fibre, high β-Carotene Carrot Bread~

Dark Chocolate Ganache

This chocolate ganache is good to be used as icing on cake, like Sacher Torte, or use as filling in Macarons,  or coating on Eclairs, or just as dipping sauce for your finger biscuit.

Sweet Short Pastry - Pate Frolle

A crisp sweet pastry with almond scented. This is the best short pastry I love so far. I have used it to make Almond Sponge Strawberry Tart.

Sweet Short Pastry - Pate Sablee

I got this recipe from a friend who is working in an Italian restaurant, the pastry turns out beautifully. Although it is a bit soft too handle, but it is worth the effort.

Vanilla Macaron with Dark Chocolate Ganache

Egg shell thin like outer layer. crispy on the outside, soft and chewy on the inside with dark chocolate ganache filling... You must love this macaron.... ^^

Vanilla Creme Patissiere

This recipe is to go with my choux puffs~ If you like to have other flavours adding to it, chocolate or coffee or even green tea would go perfect with it. Or instead of Sugar, use Honey, it will give nice texture and smell~~ Yummy yummy~~

Choux Cream Puffs

I always love the choux cream puffs in Japan, because it is so delicious and not expensive. The shop I used to go is called "Cozy Corner", they have the choux cream puffs with creme patissiere or ice cream, or even Jumbo size choux cream puffs too! Just loving it!

And... today, I am making my own version of Choux Cream Puffs~ And, this recipe is suitable to make eclairs too

Ice Cream Making Tips

Temper the egg yolk
It means slowly adding hot liquid to egg yolks and whisk at the same time.

Ice cream custard should be cook till it is thick enough to coat the back of wooden spoon. If you draw your finger along the spoon, the trail should not fill in immediately.

High Gluten Flour - also known as Bread Flour, with the protein contain 12.5%-13.5%.

Non Fried Potato Rings

Today, after coming back from school, the crave for potato chips was killing me.

As I searching thru the kitchen, I can only find potatoes in the kitchen!

So, created something to kill my potato chips drive as well as do some pipping practice~

Here is my potato rings (not chips anymore)...

Looks yummy and taste yummy~ And... it is healthy as there are no preservatives, artificial flavoring nor fried.

You`re Hot Bread

I was reading Japanese cooking website today and came across different kind bread recipes that use "yu-dane".  So, tried to translate it to English using Google Translate, and it turns out to be "You are Hot"! Ha, what a cute Translator.

Genki White Bread

Throat Lozenge Lemon Ginger Sorbet

The weather is so unpredictable these days, it is like four seasons in a day, I guess this dessert should be suitable for this kind of weather, refreshing lemon like spring, hot ginger like summer, cold sorbet like winter and nothing for autumn as I am not good at "poem making". LOL

Lesson Learnt from Bread Fermentation

Always ended up with hard stone bread or the dough collapsed as soon as they are in the oven... Finally my FACA (Failure Analysis and Corrective Action) found the root cause and solve the problem...

Goma Pan

Goma is Sesame in Japanese language. Basically Japanese uses Goma almost in everything, from cooking oil to entree, main course and even dessert like ice cream. 

I have tried white goma ice cream for once while in Osaka, Japan. Still cant forget the taste of it till now... But today, I am going to try making Goma Bread instead of Ice Cream.

Komodo Oil Free Cookies

It's named "Kodomo Cookies" (means Cookies for Kids) because it is oil free, butter free... And it is good for chewing, good to keep the kid quiet and stay still for sometime (sometimes works on adult too, LOL).
